Pinto beans are often less expensive and widely available.

Light coconut milk reduces calories, while milk is a budget-friendly alternative.
Wash and pick through red kidney beans to remove any unattractive beans or stones.
Soak dry beans overnight in water if not using canned beans.
Place washed beans in a slow cooker with water and set to high for about 2 hours until tender.
Add 2 tablespoons of small leaf thyme, 5 finely chopped garlic cloves, and half a finely chopped onion to the slow cooker with the beans.
Cover the slow cooker and let the beans cook until they are tender, checking that they are not too soft.
Once beans are tender, measure out 1 and 3/4 cups of the cooked beans.
In a pot, add the 1 and 3/4 cups of beans, 2 cups of rice, and 4 cups of liquid (1 and 3/4 cups of coconut milk and 2 cups of water).
Season with black pepper and additional salt to taste.
Bring the mixture to a boil, then lower the heat and cover the pot.
Cook for about 10 minutes until the rice is fully cooked and excess moisture has dried up.
Remove any thyme stems from the pot before serving.
