Rinse rice under cold water until water runs clear.
Soak kidney beans overnight in water.
Drain beans and place in a pot with fresh water.
Boil beans until tender, about 45 minutes.
Add coconut milk and seasonings to the pot with beans.
Stir in rinsed rice and bring to a boil.
Reduce heat to low and cover pot.
Simmer until rice is cooked and liquid is absorbed, about 20 minutes.
Remove from heat and let sit covered for 10 minutes.
Fluff rice with a fork before serving.
