Originating from the Caribbean, Rice & Peas is a staple dish often served alongside various meats and fish. Traditionally made with pigeon peas or kidney beans, it's a symbol of comfort and celebration, especially during festive occasions. Today, this dish has transcended borders, enjoyed in various forms around the world, showcasing the rich flavors of Caribbean cuisine.

Pinto beans are often less expensive and widely available.

Light coconut milk reduces calories, while milk is a budget-friendly alternative.
Soak red kidney beans in water overnight for 7-8 hours.
Rinse the soaked kidney beans and add them to a pot.
Add 1.5 cans of coconut milk to the pot with the kidney beans.
Heat the pot on medium until it comes to a boil, then let it simmer for 1 hour.
Stir the mixture every 10-15 minutes to prevent the coconut milk from drying up.
Chop 2 spring onions finely and set aside.
Dice 1 garlic clove by crushing it to remove the shell, then set aside.
In a bowl, combine 3 cups of washed rice with the chopped spring onions and diced garlic.
Add 2 teaspoons of thyme and 2 teaspoons of castor sugar to the rice mixture.
Pour in 3-4 cups of water into the rice mixture, adjusting based on desired rice texture.
After 1 hour, check the kidney beans for softness by tasting one.
Add the rice mixture to the pot with the kidney beans and coconut milk.
Stir the ingredients together and bring to a boil.
Once boiling, reduce the heat, cover the pot, and let it simmer for 20 minutes.
