Take your desired amount of cooked rice and peas and place it in a clean, dry bowl.
Cover the bowl loosely with plastic cling wrap or a ziplock bag to keep it fresh.
Prepare an ice bath by filling a larger container with water and adding blocks of ice to it.
Carefully place the bowl of rice and peas into the ice bath, ensuring the water doesn't overflow into the bowl.
Leave the rice and peas in the ice bath until they are properly cooled.
For a lunch portion, wrap the rice and peas in plastic cling wrap and place it in the refrigerator freezer (not the deep freeze).
For a dinner portion, store it in the refrigerator freezer for up to ten days.
To thaw, move the rice and peas from the freezer to the refrigerator overnight before consuming.
When ready to eat, add a little warm water and salt to the rice and peas, then heat on low without stirring until warmed through.
Alternatively, place the rice and peas in a crock pot with a little salty water and heat on low for three to four hours.
