1 can (15 oz) red kidney beans, drained and rinsed
2 cloves garlic, minced
2 tablespoons vegetable oil
1 Scotch bonnet pepper (whole, optional)
1/2 tsp french thyme
1 scallion, chopped
1/2 tsp salt
1/2 tsp pimento berries (whole)
1 cup coconut milk powder (reconstituted)
2 cups long-grain white rice

Add water to the pressure cooker.

Wash the red kidney beans thoroughly before cooking.

Add the washed kidney beans to the pressure cooker.

Add garlic and a little bit of vegetable oil to the pressure cooker.

Cover the pressure cooker and cook for about 25 to 30 minutes.

After cooking, check the beans by pressing a small amount to see if they are cooked through.

Add scotch bonnet pepper, french thyme, scallion, salt, and pimento berries to the cooked beans.

Add coconut milk powder and let it cook for about five minutes.

Combine everything together nicely in the pot.

Add washed white rice to the pot and mix well with the other ingredients.

Cover the pot and allow it to cook until most of the water is absorbed.

Turn the heat down to low and let it simmer until fully cooked.
