1 cup kidney beans
water
1 piece frozen coconut milk
salt
all-purpose seasoning
spring onions
1 scotch bonnet pepper
1 cup jasmine rice

Soak 1 cup of kidney beans overnight.

Add the soaked kidney beans to a pot with water, cover it, and boil for about an hour until the beans are soft.

Check the beans by squeezing them; they should crush easily.

Add a piece of frozen coconut milk to the pot with the beans.

Add salt and all-purpose seasoning to the mixture.

Add spring onions and 1 scotch bonnet pepper to the pot.

Let the mixture boil for another 10 minutes to cook the coconut milk.

Wash 1 cup of jasmine rice thoroughly.

Add the washed jasmine rice to the pot and mix it in well with the bean mixture.

Cover the pot and let it steam for 15 to 20 minutes.

Once done, fluff the rice with a fork and optionally cover it for another minute or two.

Remove the scotch bonnet pepper and spring onions from the pot before serving.
