1 can (15 oz) pre cooked Red Kidney beans
2 cups long grain rice
1 can (13.5 oz) coconut milk
1/2 tsp salt
1/2 tsp ground all spice

Rinse the rice under cold water until the water runs clear, then drain.

In a large pot, combine the coconut milk, water, salt, black pepper, thyme, garlic, onion, and scallion. Bring to a boil over medium heat.

Add the rinsed rice to the pot and stir well.

Add the kidney beans and the whole Scotch bonnet pepper (if using) to the pot.

Reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.

Remove the pot from heat and let it sit, covered, for an additional 5 minutes.

Remove the Scotch bonnet pepper before serving.

Fluff the rice with a fork and serve warm.
