1

Welcome to the episode, today we're making Oil Down with pigtails.

2

Introduce the ingredients: grind seasoning (garlic, banana pepper), fresh seasoning (celery, pimento peppers, garlic, onion, habanero pepper), pumpkin, dashing bush, salt, butter, breadfruit, pigtails, Maggi cube, black pepper, coconut milk, and water.

3

Cut the breadfruit: cut off the stem, slice in half, then into pieces, and remove the thick skin.

4

Grate the pumpkin and chop the dashing bush into fine pieces.

5

Boil water in a pot, add half a stick of butter once boiling.

6

Add the grated pumpkin to the boiling water first as it takes the longest to cook, stir, and let it cook.

7

Add the chopped dashing bush and all the chopped seasoning (pimento, celery, garlic, onion) to the pot.

8

Add grind seasoning, salt, and black pepper to the pot, then add the breadfruit. Stir everything together.

9

Boil for 35-40 minutes, then add the pre-boiled pigtails (which have been boiled three times to reduce saltiness).

10

Add three tablespoons of powdered coconut milk to the pot and a piece of habanero pepper for heat.

11

Let everything cook together, stirring occasionally, and taste for salt and pepper.

12

Form dumplings with flour (though the creator mentions they can't make them, they demonstrate rolling them).

13

After 20 minutes, check for softness; cook for another 15 minutes if desired.

14

After 35 minutes, check the consistency; it should be thick. Adjust cooking time based on preference for softness.

15

After a total of 45 minutes, the dish is ready to eat.
