2 lbs breadfruit
1 lb pumpkin
2 cups carrots
1 cup okra
1 lb salted pigtail
4 cloves garlic
2 whole pimento pepper
1 cup scallion
2 tablespoons thyme
1/2 cup shadow benny (culantro)
1 cup corn
1 can (13.5 oz) coconut milk
1 teaspoon salt
1 tablespoon all-purpose seasoning
1 whole scotch bonnet pepper

Peel and core the breadfruit, then cut it into small pieces.

Boil salted pigtail for 35 to 40 minutes to remove excess salt and make it tender.

In a pot, add a tad bit of cooking oil and sauté garlic, pimento pepper, scallion, thyme, and shadow benny until fragrant.

Add carrots and pumpkin to the pot and sauté everything together.

Add the cooked pigtail to the pot and sauté with the vegetables.

Add the breadfruit and corn (optional) to the pot, ensuring everything gets a touch of flavor.
