1

Add 500 grams of flour to a mixing bowl.

2

Add 10 grams of instant yeast and 20 grams of sugar to the flour and mix.

3

Cut 120 grams of butter into small cubes and add to the mixture.

4

Mix for about 2 minutes until the butter is incorporated into the flour mixture.

5

Pour in 200 milliliters of lukewarm milk and mix everything together for about 6-7 minutes until a smooth dough forms.

6

Cover the dough with oiled plastic wrap to prevent sticking and let it rise in a warm place for about 30 minutes.

7

Prepare the meat filling by grinding 300 grams of rib meat and 300 grams of pork neck together.

8

Add 2 beschuiten (Dutch rusks) to the meat mixture along with 1.5 teaspoons of salt, 1 teaspoon of freshly ground pepper, and 3 teaspoons of nutmeg, and mix well.

9

Divide the risen dough into equal pieces, about 40 grams each.

10

Roll each piece into a rectangle, place a portion of the meat mixture in the center, and fold the dough over the filling, sealing the edges tightly.

11

Place the filled dough seam-side down on a baking sheet lined with a silicone mat or parchment paper.

12

Cover the baking sheet with oiled plastic wrap and let the dough rise for another hour in a warm place.

13

While the dough rises, prepare a chili sauce by soaking 4 deseeded chili peppers in boiling water for about 15 minutes.
