1

Pick out the dirt from the black eyed beans.

2

Rinse the beans thoroughly and drain them.

3

Pour the beans into a pot and add 6 cups of water.

4

Cover the pot and cook the beans for about 2 to 2 and 1/2 hours, checking occasionally to add more water if needed.

5

After 2 hours and 15 minutes, add salt to taste and mash the beans while noting that they will absorb water and become drier as they cool.

6

For the sauce, rehydrate 2 dried red bell peppers and 1 dried red chili pepper by soaking them in water overnight.

7

In a blender, combine the rehydrated peppers, 1 medium-sized onion, 1 teaspoon of diced ginger, and 1/4 cup of water, then blend until well combined but not super fine.

8

Preheat palm oil in a pan without bleaching it until very hot.

9

Add thinly sliced onion to the hot oil and cook until browned but not burnt, stirring occasionally for about 10 to 15 minutes on medium heat.

10

Add the blended pepper mixture to the browned onions, stir together, cover, and cook on medium heat for about 10 to 15 minutes, stirring occasionally to prevent burning.

11

After cooking, add the stock cube, dried crayfish, black pepper, and salt to taste, mixing thoroughly and cooking for another 5 minutes until the sauce darkens in color.
