500g boneless chicken
2 tbsp yogurt
1 tbsp lemon juice
2 tbsp cornflour
2 tbsp all-purpose flour
1 egg
ยฝ tbsp ginger garlic paste
1 tsp black pepper powder
1 tsp coriander powder
ยฝ tbsp red chili powder
ยฝ tsp iodized Himalayan pink salt
ยฝ tsp turmeric powder
ยฝ tsp garam masala powder
ยผ tsp orange food color (optional)
few drops red food color (optional)
as required cooking oil (for frying)
2 tbsp cooking oil
1ยฝ tbsp garlic, finely chopped
4-5 green chilies, julienne
12-15 curry leaves
2 small onions, sliced
1 tbsp soy sauce
ยฝ tbsp vinegar
1 tbsp hot sauce
ยฝ tbsp green chili sauce
1 tbsp tomato ketchup
1ยฝ cup cabbage, julienne
ยฝ cup spring onion, chopped
handful fresh coriander, chopped
as required roll sheets
as required cooking oil (for frying)

In a bowl, add chicken, yogurt, lemon juice, cornflour, all-purpose flour, egg, ginger garlic paste, black pepper powder, coriander powder, red chili powder, pink salt, turmeric powder, garam masala powder, orange food color, mix well.

Add red food color for a brighter color & marinate for 30 minutes.

In a wok, add cooking oil & heat it.

Add marinated chicken, fry on medium flame until crispy. (Air fry at 180C for 12 minutes)

Take out & place on a cutting board & chop the chicken pieces with the help of a knife.

In a wok, add cooking oil, heat it, add garlic, green chillies, mix well, and sautรฉ until fragrant.

Add curry leaves, onion slices, mix well & sautรฉ on medium flame until translucent.

Add chopped chicken, mix well.

Add soy sauce, vinegar, hot sauce, green chilli sauce, ketchup & mix well.

Add cabbage, spring onion, fresh coriander & toss well for 2 minutes & let it cool completely.

On a cutting board, place roll sheets, add prepared chicken 65 filling (2-3 tbsp), now fold, apply slurry & make rolls. (Makes: 24-25)

Can be stored in an airtight container for up to 2 months in the freezer.

In a wok, add cooking oil, heat it, add prepared rolls, fry on low flame until golden & crispy. (Air fry at 180 C for 8-10 minutes).

Serve with tomato ketchup!
