Broiled Salmon with Blue Cheese and Lemon

Take a whole side of salmon and remove the tail and collar area to ensure uniform thickness.
Place the salmon on a tray lined with baking paper to prevent sticking.
Sprinkle the salmon with shallots and coarsely chopped dill.
Cut butter into fourths and place on top of the salmon.
Drizzle lemon juice over the salmon.
Arrange lemon slices around the edges of the salmon.
Pour about 1/4 cup of white wine over the salmon.
Add blue cheese on top of the salmon.
Broil the salmon on high, 4-5 inches away from the heat source for about 10 minutes for every inch of thickness.
Remove the salmon from the oven when you start to smell the cheese and it has a delicious browning on top.
