Broiled Salmon

4 salmon fillets (6 oz each)
2 tablespoons olive oil
1/2 teaspoon coarse salt
1/4 teaspoon black pepper

Preheat the broiler to high and adjust the top rack so it's six inches from the element.

Line a baking sheet with foil (do not use parchment as it will burn).

Spray the baking sheet with cooking spray (if using skinless fillets).

Brush the salmon fillets with olive oil.

Season the salmon all over with coarse salt and pepper.

Place the salmon on the baking sheet.

Broil the salmon until golden brown on top and just short of cooked through the center (5 to 6 minutes for farmed salmon, 4 to 5 minutes for wild salmon).

Check the internal temperature: wild salmon is best at 120 degrees, farmed salmon at 125 degrees.

Cut into the center of the fillet to check for a hint of translucence.
