Broiled Salmon

2 tbsp soy sauce
1 tsp toasted sesame oil
4 salmon fillets (5 to 6 oz each, about 1 inch thick)
1 cup couscous
1 and 1/4 cups boiling water

Cut off the tough parts of the asparagus. You can find where to cut by breaking off one piece to see where it snaps.

Add all the asparagus to a baking tray, leaving room for the salmon later.

Cut one lemon into wedges and add them to the tray with the asparagus for broiling.

Make the sauce by combining 2 tbsp of lemon juice, 2 tbsp of soy sauce, and 1 tsp of toasted sesame oil in a bowl and stir together.

Drizzle half of the sauce over the asparagus and toss to lightly coat them.

Broil the asparagus for about 3 minutes.

While the asparagus is broiling, prepare the couscous by adding 1 cup of couscous to 1 and 1/4 cups of boiling water with a little salt, stir, and turn off the heat. Let it sit for 5 minutes.

After 3 minutes, move the asparagus to make room for the salmon fillets.

Add 4 salmon fillets to the center of the tray with the asparagus.

Season the salmon with a little salt and drizzle with some of the sauce. Reserve some sauce for later.

Return the tray to the broiler for another 6 minutes, checking the asparagus and turning them if necessary.

After 5 minutes, fluff the couscous which is now fully cooked and ready to serve.

Plate the couscous, salmon, and asparagus, and drizzle more sauce over the salmon and asparagus if desired.

Serve with broiled lemon wedges on the side for squeezing.
