RSRSmain
6 servings
Servings4
1/2 lb (225 g) ground beef
1 cup (200 g) uncooked rice
1 medium onion, finely chopped
3 bell peppers, tops cut off and seeds removed
1 cup (240 ml) marinara sauce
1 cup (120 g) grated cheddar cheese
Olive oil
Salt
Black pepper
Garlic powder
Paprika
1

Cook a cup of rice (200 g) according to the package instructions.

2

While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened.

3

Add the ground beef, breaking it up with a spatula as it cooks. Season with salt, pepper, garlic powder, and paprika. Cook until the beef is browned and fully cooked through.

4

In a large mixing bowl, combine the cooked rice, beef mixture, 3/4 cup (180 ml) of marinara sauce, and 3/4 cup (90 g) of grated cheddar cheese. Mix well.

5

Preheat your oven to 375°F (190°C). Place the bell peppers in a baking dish.

6

Fill each bell pepper with the beef and rice mixture, pressing down slightly to pack the filling. Top each pepper with a spoonful of marinara sauce and the remaining grated cheese.

7

Put the cut-off bell pepper tops back on.

8

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

9

Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
