1 small lettuce
1/8 part of 1 cucumber

1 tsp coconut sugar
4 teaspoons apple cider vinegar
1 cup water
1 clove garlic, chopped
2 tablespoons white sugar
1 string of spring onion, sliced
1/2 of 1 turnip, sliced into strings
Chia seeds, soaked in water
Toasted sesame seeds
1 small carrots, shredded

Boil rice vermicelli for 3 minutes, or until al dente, and drain.

Fill a large bowl with warm water.

Dip one wrapper into the hot water for 1 second to soften.

Lay wrapper flat.

In a row across the center, place sliced lettuce, a handful of vermicelli, shredded carrots, sliced cucumber, sliced turnip, soaked chia seeds leaving about 2 inches uncovered on each side.

Fold uncovered sides inward, tightly roll the wrapper.

Repeat with remaining ingredients.

In a small bowl, mix salt and pepper, coconut sugar, water, apple cider vinegar, garlic, spring onion and sesame seeds for dipping sauce.
