1

Soak leaf gelatin in cold water to bloom it.

2

Mix together double cream, milk, caster sugar, and elderflower cordial in a saucepan.

3

Bring the mixture slowly to a boil, being careful not to over boil it.

4

Once boiling, remove from heat and add the bloomed gelatin, whisking until fully incorporated.

5

Pour the mixture into molds or jars and refrigerate overnight to set.

6

Prepare mint sugar by blitzing caster sugar, demerara sugar, and mint in a food processor until fine.

7

Prepare raspberry coulis by blitzing fresh raspberries and sugar, then passing through a fine sieve.

8

After a few hours or overnight, check if panna cotta is set by giving it a gentle shake to see if it wobbles.

9

To turn out the panna cotta, dip the mold in boiling water for a couple of seconds to loosen it.

10

Run a knife along the top edge of the panna cotta to loosen it, then flip it over onto a plate.

11

Garnish with raspberry coulis, fresh raspberries, mint sugar, and a mint leaf.
