Slice pork shoulder and pork belly into thin pieces.
Combine soy sauce, pineapple juice, brown sugar, crushed garlic, and black pepper in a bowl.
Add lemon or calamansi juice and a few drops of Worcestershire sauce to the marinade.
Pour marinade over the sliced pork, ensuring all pieces are coated.
Cover and marinate for at least 2 hours.
Soak bamboo skewers in water for 30 minutes to prevent burning.
Thread marinated pork onto skewers, leaving space between pieces.
Preheat grill to medium-high heat.
Brush grill grates with oil to prevent sticking.
Place skewers on the grill and cook until charred and cooked through, turning occasionally.
Baste with the prepared basting sauce made from pineapple juice, soy sauce, banana ketchup, and brown sugar during the last few minutes of cooking.
