Soak shiitake mushrooms in hot water for 20 minutes or until soft.

Slice spring onions as finely as possible.

Chop the prawns or shrimp into small pieces, reserving a few for garnishing.

Slice reserved prawns in half if they are large.

Once mushrooms are soft, squeeze out the water and chop them finely.

In a large bowl, combine minced pork and chopped prawns.

Add chopped spring onions, chopped mushrooms, and grated ginger.

Add a quarter of a teaspoon of salt, pepper, a pinch of bicarbonate of soda, a tablespoon of sesame oil, and two tablespoons of soy sauce to the mixture.

Mix everything thoroughly until it becomes sticky.

Cover the mixture with cling film and let it stand in the fridge for 20 minutes.

Peel two or three slices from the carrot and dice it extremely finely for garnish.

Slice the remainder of the carrot and set aside.

Cut wonton skins into round shapes using a round cutter.

Place a wrapper on your thumb and forefinger and stuff a large teaspoon of the filling in, pushing it down to the bottom.

Place dumplings on top of sliced carrot in the steamer to prevent sticking.

Once water in the pan is boiling, steam the dumplings on high heat for six to eight minutes depending on their size.

Combine soy sauce with rice wine vinegar or chili sauce for dipping sauce, adding water if too salty.

After six to eight minutes, remove dumplings from the steam and serve immediately.
