Falafel

Cultural Context

Originating from the Middle East, falafel is a popular street food made from ground chickpeas or fava beans. It holds cultural significance as a staple in vegetarian diets and is often served in pita bread with fresh vegetables and sauces. Today, falafel is enjoyed worldwide, with variations in spices and serving styles reflecting local tastes.

Servings4
2 cups dried chickpeas
1 bunch parsley
1 bunch coriander
1 medium-sized onion
6 cloves garlic
1 chili
salt
freshly cracked black pepper
1 teaspoon cumin
2 heaped teaspoons coriander powder
2 tablespoons chickpea flour
0.5 teaspoon baking soda
olive oil
1

Soak 2 cups of dried chickpeas in water for about 24 hours and drain the water.

2

Process the soaked chickpeas in a food processor until they are broken down into tiny pieces, not a paste.

3

Chop a bunch of parsley and a bunch of coriander roughly and add them to the food processor.

4

Add 1 chopped chili, 1 medium-sized onion (roughly chopped), and 6 cloves of garlic (roughly chopped) to the food processor.

5

Add salt, freshly cracked black pepper, 1 teaspoon of cumin, 2 heaped teaspoons of coriander powder, 2 tablespoons of chickpea flour, and 0.5 teaspoon of baking soda to the mixture.

6

Mix everything well and refrigerate the mixture for about 1 hour.

7

Form the falafel mixture into small balls or patties and brush a plate with olive oil.

8

If the mixture is too wet, add an additional 2 teaspoons of chickpea flour to improve the consistency.

9

Brush the formed falafel with olive oil and place them in the air fryer at 180°C for 10 minutes.

10

After 10 minutes, flip the falafel and cook for an additional 5 minutes.
