Falafel

1.5 cups chickpeas
2 onions
8 to 9 cloves garlic
3 green chillies
handful of mint leaves (about 0.5 cup)
0.5 cup coriander leaves
salt (to taste)
juice of half a lemon
2 teaspoons baking soda
1 bread (or 2-3 tablespoons bread crumbs)

Wash and soak 1.5 cups of chickpeas in water overnight.

Drain the water from the chickpeas and add them to a food processor.

Add 2 roughly chopped onions, 8 to 9 cloves of garlic, 3 green chillies, a handful of mint leaves, and half a cup of coriander leaves to the food processor.

Add salt as required and the juice of half a lemon to the mixture in the food processor.

Grind the mixture into a coarse paste.

Add 2 teaspoons of baking soda to the mixture and grind it well again.

Add 1 bread (or 2-3 tablespoons of bread crumbs) to the mixture as a binding agent and combine well.

Transfer the mixture to a bowl and shape it into balls.

Heat oil in a pan (reusing oil from previous frying if desired).

Drop the falafel balls into the hot oil and fry them on high flame for 3 to 4 minutes until golden brown.

Transfer the fried falafel to a tissue paper to absorb excess oil.
