0.5 cup fresh parsley
1 large onion
8 cloves garlic
2 tablespoons ground coriander
1 tablespoon ground cumin
0.5 teaspoon ground cayenne pepper
0.5 cup bread crumbs
2 to 3 tablespoons flour
3 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
vegetable oil for frying

Soak dried chickpeas and dried fava beans overnight in water to the brim.

The next morning, pour off the soaking water from the chickpeas and fava beans.

Blend the soaked chickpeas in a food processor until they reach a fine crumbly mixture and empty into a bowl.

Blend the soaked fava beans in the food processor until they are nice and crumbly and add to the same bowl as the chickpeas.

Add cilantro, parsley, and onion to the blender and process until it forms a nice paste. Add garlic halfway through blending.

Combine the blended herbs and onion mixture with the chickpea and fava bean mixture in the bowl.

Add ground coriander, ground cumin, cayenne pepper, bread crumbs, and salt (3 teaspoons) to the mixture and mix well.

Check the dough's consistency; if too crumbly, add 2 to 3 tablespoons of flour and mix again.

Add baking soda and baking powder to the mixture and let it sit for 10 to 15 minutes to activate.

Preheat a deep frying pan with about 1.5 inches of vegetable oil on medium heat.

Mold the falafel mixture into balls using two spoons or a falafel molder and carefully drop them into the hot oil.

Fry the falafel until they are medium golden brown, turning them to ensure even cooking.

Once cooked, place the falafel on a paper towel to absorb excess oil.

Serve the falafel in a sandwich or with tahini sauce, garlic sauce, and desired vegetables like tomatoes and pickled turnips.

Break the falafel patty to show the fluffy inside before placing it in the sandwich.
