Slice the pork into serving size pieces.
In a large cup, combine 2/3 cup Sprite, 1/2 cup soy sauce, 3/4 cup banana sauce, 2 tablespoons calamansi juice, 1/2 teaspoon ground pepper, and 1/2 cup brown sugar, along with 1 head of chopped garlic. Stir well to combine.
Marinate the pork in the sauce for 3 to 6 hours, or overnight.
Soak bamboo skewers in water for 30 minutes to prevent burning.
Thread the marinated meat onto the soaked skewers.
Transfer the marinade to a saucepan and bring to a simmer over medium-low heat.
Dissolve 2 tablespoons corn starch in 2 tablespoons water, then add to the simmering sauce and cook until thickened.
Heat the grill to medium heat.
Grill the skewers for about 5 minutes, brush with marinade, flip, and grill for another 5 minutes or until cooked through.
