1 joint of lamb shoulder - Approx 1.2 KG

2 medium carrots, peeled and sliced
100 g frozen peas
1 garlic clove, finely chopped

Pat the lamb shoulder dry with kitchen paper to remove moisture, helping it brown beautifully.

Score the surface of the lamb to create deep cuts for the marinade.

Combine rosemary, sage, garlic, salt, pepper, and olive oil in a bowl, then rub the marinade into the lamb.

Place the lamb in an ovenproof dish and pour white wine around it.

Bake at 170°C for 40 minutes before adding potatoes.
