In modern times, tanghulu has gained popularity internationally, with various fruits used to cater to diverse palates.

Colocar 200 gramos de azúcar en un cazo.
Añadir 100 mililitros de agua al cazo con el azúcar.
Llevar el cazo al fuego a temperatura media sin remover la mezcla.
Cocinar hasta que empiece a salir vapor y la mezcla adquiera un poco de densidad, aproximadamente 20 minutos.
Bajar un poco la temperatura y continuar cocinando hasta que la mezcla adquiera un color dorado.
Pelar las mandarinas cuidadosamente sin romper la fruta.

Preparar un soporte para las frutas caramelizadas utilizando porexpán o un cartón.
Comprobar el caramelo vertiendo una gota en agua fría; debe formar una gota dura.
Retirar el cazo del fuego una vez que el caramelo esté en el punto deseado.
Sumergir una fresa en el caramelo, girándola para cubrirla uniformemente y quitar el exceso.
Colocar la fresa sobre el soporte para que se seque.
Repetir el proceso con las mandarinas, asegurándose de girar para quitar el exceso de caramelo.
Continuar hasta caramelizar todas las frutas.
Dejar que las frutas se endurezcan durante unos minutos.
