Prepare 200 grams of glutinous rice and put it in a bowl.
Pour in an appropriate amount of water and wash the glutinous rice briefly without scrubbing hard.
Pour out the rice water and set it aside for later use.
Cover the glutinous rice with water and let it soak for an hour.
Prepare a few frozen prawns, cut off the shrimp tails and discard the heads.
Remove the shells from the prawns and cut a small opening on the back to remove the shrimp thread.
Wash the shrimp meat in water and drain it, then set it aside.
Prepare a piece of ginger, cut it into thin slices, then into thin strips, and place it in a small bowl.
Prepare a few green onions, cut them into pieces, and add them to the bowl with ginger.
Add a few star anise slices and a small handful of Sichuan peppercorns, then pour boiling water to cover all the ingredients.
Stir with chopsticks and let it soak for 10 minutes to extract the aroma.
Prepare half a peeled carrot, cut it into thin slices, then into strips, and finally into small dices.
Prepare a piece of old tofu, add 1 tablespoon of table salt, and pour boiling water to cover it for blanching.
After blanching, drain the tofu and break it up into small pieces.
Prepare 300 grams of pork, cut it into small pieces, and grind it with the shrimp in a meat grinder until slightly grainy.
Filter the onion and ginger water into the bowl of minced meat, about 30 ml.
Add 2 spoons of light soy sauce, 1 spoon of oyster sauce, 1 spoon of salt, and an appropriate amount of pepper.
Beat in an egg white, wear disposable gloves, and mix the filling until thick and well combined.
Add chopped green onions, diced carrots, and tofu to the filling and mix evenly.
Add 1 spoon of cornstarch and mix until well combined.
Check if the glutinous rice is soaked by squeezing it; if it can be crushed, it is ready.
Wash the glutinous rice a few times, drain it, and set it aside.
Prepare a peeled carrot, cut it into thin slices, and arrange them in circles on a plate.
Take a small handful of meat filling (about 40 grams), round it into a ball the size of a table tennis ball, and coat it with glutinous rice.
Rub the glutinous rice firmly around the meatball and place it on the plate.
Repeat with the remaining filling and arrange them on the carrot slices.
Insert a shrimp tail into the center of each glutinous rice dumpling.
Steam the dumplings in a pot with cold water, cover, and steam over high heat for 30 minutes.
After steaming, check for doneness; the dumplings should not have a white core in the middle.
