Start by preparing the lamb shanks, seasoning them with black pepper.

Heat Greek olive oil in a pan until hot.

Add the lamb shanks to the pan, turning them a couple of times to give them color, then remove them from the pan.

Add chopped onions, garlic, and carrots to the pan and mix them together, cooking for a couple of minutes.

Stir in 2 tablespoons of tomato paste, 1 teaspoon of cinnamon, and 1/2 teaspoon of spice mix, along with salt and black pepper, and a little Greek oregano.

Mix everything together and cook for another minute.

Pour in 1 cup of red wine and ensure it's well mixed.

Add 800 grams of diced tomatoes and 1 cup of beef broth, mixing everything together.

Return the lamb shanks to the pan, adding fresh rosemary and 3 bay leaves.

Bring the mixture to a boil, then cover the pan with a lid.

Transfer the covered pan to an oven preheated to 175°C (approximately 347°F) and cook for 2 hours.

After 2 hours, take the pan out and flip the lamb shanks around if needed, then uncover and cook for an additional 30 minutes.

Let the lamb shanks rest for 10 minutes before serving.

Serve with vegetables and drizzle some of the cooking juice over the top, garnishing with fresh parsley.
