1 pig's trotter (for vegetarian version, omit)
1 L water
100 g all-purpose flour
50 gr butter
1 onion
2 cloves
1 pinch of caraway powder
100 ml white wine
100 g grated mountain cheese or Gruyère
salt
pepper

Prepare a broth from the coarsely chopped soup vegetables: Add the pig's trotter and bring to a slow boil together with the vegetables and the water, adding a little salt.

Simmer for at least an hour with the lid closed. Then strain out the vegetables with the pig's trotter and set the broth aside.

Cover the bottom of an iron pan with flour and heat slowly, stirring constantly. Turn the flour over and over until it is hazelnut brown.

Mix in the butter and deglaze with the broth.

Spike the onion with 2 cloves and add it into the soup.

Season with two bay leaves and a pinch of caraway powder and simmer for an hour, stirring occasionally.

Just before serving, season with the wine, salt and pepper and grate the cheese freshly over the top.
