Mock Turtle Soup

1 tablespoon lard
1 pound beef stew meat, chopped small
1/2 can whole tomatoes
1/4 teaspoon ground all spice
salt to taste
pepper to taste
3 quarts water
2 hard boiled eggs
fresh lemon juice
parsley (optional)

Heat 1 tablespoon of lard in a pot.

Add 1 tablespoon of flour to the lard to make a roux, stirring until it is a little darker than blonde, about 10 minutes.

Add 1 pound of chopped beef stew meat to the roux and brown the meat.

Break up 1/2 can of whole tomatoes with a spoon and add to the pot.

Add 1/4 teaspoon of ground all spice, salt, and pepper to taste.

Pour in 3 quarts of water and bring to a boil.

Once boiling, reduce heat to simmer and cover, cooking for 45 minutes to 1.5 hours until the meat is tender.

In a serving dish, place 2 hard boiled eggs at the bottom.

Finish the soup with a squeeze of fresh lemon juice and optional parsley.
