Start with cold water in a pot and add the beef bones, ensuring they are covered.

Turn the heat on to high and bring the water to a boil.

Once boiling, dump the water to get rid of scum and refill with cold water.

Bring the new water to a boil again before adding vegetables.

Add the sliced onion, carrots, smashed garlic, and celery to the pot, leaving the parsley aside.

Season with salt and freshly cracked pepper, about 1-2 tablespoons of salt.

Bring to a boil again, then reduce heat to low and let simmer for a minimum of 2 hours.
