This hearty soup is a staple in many households, showcasing the importance of beef in Croatian cuisine. Today, variations can be found across the Balkans, with each region adding its unique twist to this beloved dish.

Introduce the soup as the Croatian answer to everything.
Mention the ingredients: beef bones, 1 onion sliced in half, 3 carrots sliced, 3 cloves of garlic smashed, 1 celery root cut into pieces, 1/4 celery cut into pieces, parsley, salt, and pepper.
Start with cold water in a pot and add the beef bones, ensuring they are covered.
Turn the heat on to high and bring the water to a boil.
Once boiling, dump the water to get rid of scum and refill with cold water.
Bring the new water to a boil again before adding vegetables.
Add the sliced onion, carrots, smashed garlic, and celery to the pot, leaving the parsley aside.
Season with salt and freshly cracked pepper, about 1-2 tablespoons of salt.
Bring to a boil again, then reduce heat to low and let simmer for a minimum of 2 hours.
After 2 hours, taste the broth to check flavor and adjust seasoning if necessary.
Remove the vegetables and bones from the soup after simmering.
Strain the soup into a separate bowl to keep the broth clear.
Cook the soup noodles in the strained broth for about 2 minutes.
Add back the cooked vegetables (excluding garlic) into the soup after the noodles are done cooking.
Serve the soup hot.
