Croatian Meatloaf

Croatian meatloaf, known as 'mesna štruca', is a beloved dish reflecting the country's hearty culinary traditions. It often features a blend of meats and vegetables, showcasing the resourcefulness of home cooks. Traditionally served with sides like mashed potatoes or seasonal vegetables, it's a comforting family meal. In modern times, variations may include different spices or fillings, adapting to local tastes and ingredients.

Ground turkey is leaner, while ground pork can be less expensive.
Preheat the oven to 350°F (175°C).
Finely chop the onion and garlic.
Heat olive oil in a skillet over medium heat and sauté the onion and garlic until translucent, about 5 minutes.
In a large bowl, combine ground beef, ground pork, sautéed onion and garlic, bread crumbs, egg, milk, parsley, paprika, salt, and black pepper.
Mix the ingredients until well combined, but do not overmix.
Shape the mixture into a loaf and place it in a baking dish.
Finely chop the carrot and bell pepper, and sprinkle them around the meatloaf in the dish.
Pour tomato sauce over the meatloaf and add bay leaves to the sauce.
Cover the dish with foil and bake in the preheated oven for 1 hour.
Remove the foil and bake for an additional 15-20 minutes until the top is browned.
Check the internal temperature; it should reach 160°F (70°C).
Let the meatloaf rest for 10 minutes before slicing.
Serve slices warm, garnished with fresh parsley.
