400g maida (All Purpose Flour)
1 Tbsp sugar
2 Tsp instant dry yeast
1+1/2 Cup Chickpea soak for overnight
1/2 Cup chopped onion
2 Medium green chillis
7-8 garlic cloves
1/2 Cup fresh coriander
1 Tsp coriander powder
Salt to taste
1 Tsp black pepper powder
1/4 Cup homemade tahini paste
1 Tbsp lemon juice
1/3 Cup extra virgin olive oil
1 Tsp cumin powder
1 Tsp red chilli powder
1/4 Cup flour

Soak chickpeas in water overnight, then drain.

Pulse soaked chickpeas in a food processor until coarsely ground.

Add onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper to the processor.

Pulse until combined, scraping down the sides as needed.

Transfer mixture to a bowl and refrigerate for 30 minutes.

Form mixture into small balls or patties.

Heat vegetable oil in a deep pan to 350°F.

Fry falafel in batches until golden brown, about 3-4 minutes per side.

Drain on paper towels.

Serve falafel in pita bread with tahini, lemon juice, tomatoes, cucumber, and lettuce.
