1 chopped tomato
1/2 cup chopped carrots
1/2 cup chopped beans
1 cup broccoli
2 tablespoons coriander stems
1 teaspoon turmeric powder
salt to taste
4-5 cups hot water
1 teaspoon black pepper powder
1 teaspoon cumin powder
1 teaspoon Kashmiri red chili powder

Rinse the moong dal, masoor dal, and toor dal under water 3-4 times until clean.

Soak the lentils for 10-15 minutes.

Discard the soaking water and transfer the lentils to a bowl.

In a pressure cooker, add 2 tablespoons of olive oil.

Once the oil is hot, add 2 bay leaves, 5-6 black peppercorns, 1 piece of cinnamon, 2 cloves, 7-8 garlic cloves, 2 chopped green chilies, 1 inch chopped ginger, and 1 chopped medium onion.

Cook the onion on high flame for 1-2 minutes until translucent, not brown.

Add 1 chopped tomato, 1/2 cup chopped carrots, 1/2 cup chopped beans, 1 cup broccoli, and 2 tablespoons of coriander stems.

Sauté all ingredients on high flame for 2 minutes, stirring occasionally.

Add the soaked lentils, 1 teaspoon turmeric powder, and salt to taste.

Stir the lentils for 2 minutes on high flame.

Add approximately 4-5 cups of hot water, ensuring the water level is above the vegetables.

Close the pressure cooker lid and cook on medium to high flame for 3-4 whistles.

After the whistles, turn off the gas and let the cooker naturally de-pressurize.

Open the lid and remove the bay leaves and cinnamon stick.

Use a hand blender to puree the dal until smooth, or let it cool and blend in a mixer.

Add 1 teaspoon black pepper powder, 1 teaspoon cumin powder, and 1 teaspoon Kashmiri red chili powder to the puree and mix well.

Adjust the consistency of the soup by adding more hot water as needed.

Cover and simmer the soup for 5 minutes.

After 5 minutes, remove the lid and add a generous amount of fresh coriander leaves.
