1 cup bottle gourd (Dudhi)
1 cup cauliflower florets

1/2 medium onion

1/4 teaspoon cumin powder
1/4 teaspoon coriander powder
1 teaspoon pink Himalayan salt
2 cups water
1/2 teaspoon pepper powder
red chili flakes (optional)
4 slices of brown bread
1 tablespoon olive oil

Wash and soak 1/2 cup of tur Dal for 10 minutes.

In a pressure pan, heat 1 tablespoon of olive oil.

Add coarsely ground ginger garlic paste (from 1/2 inch ginger and 3-4 small garlic cloves) and sauté.

Add diced carrots, cauliflower florets, and bottle gourd (Dudhi).

Add 1/4 teaspoon turmeric powder, 1/4 teaspoon red chili powder, 1/4 teaspoon cumin powder, 1/4 teaspoon coriander powder, and salt (about 1 teaspoon).

Add soaked tur Dal and double the quantity of water (1 cup).

Mix well and pressure cook for 1 whistle on high, then simmer for 8-10 minutes.

Once cooled, blend the mixture until smooth, adding 2 cups of water to adjust consistency.

Simmer for 2-3 minutes, adding pepper powder and red chili flakes if desired.

Prepare croutons by cutting 4 slices of brown bread into cubes, tossing in 1 tablespoon of olive oil, and cooking until golden brown.
