2 Pound shrimp, peeled and deveined
8 Ounce crushed pineapple
1/2 Cup cider vinegar
1/2 Cup white sugar
1/4 Cup pimento, chopped
1/2 Cup bell pepper, chopped
1 1/2 garlic clove, chopped
2 Tablespoon soy sauce
1/4 Cup water
1/2 Teaspoon hot sauce
2 Tablespoon corn starch, mixed with 1/4th cup water
2 Cup self rising flour
Salt to taste
Black pepper to taste
Cayenne pepper to taste (optional)
Granulated garlic to taste
2 Cup oil (for deep frying)

For the sauce: in a pan, add the crushed pineapple, cider vinegar, sugar, pimentos, bell pepper, garlic, soy sauce, water and hot sauce. Allow to cook on medium heat and simmer for about 5 minutes.

Gradually stir in the cornstarch to thicken the sauce. Keep the sauce on low heat, to keep it warm.

For the dredging flour: in a bowl, combine all the ingredients for the dredging flour and mix well.

For the shrimp: dredge the shrimp in the seasoned flour and then dip it in a bowl of water. Dredge it once again in the flour. Repeat with all the shrimps.

In a frying pan, heat the oil and carefully drop the shrimp in to deep fry until golden. Remove on paper towels.

Serve on a platter accompanied with the sweet and sour sauce.
