Introduce the viral homemade döner kebab recipe.
Use 1 kg of ground meat (700 g lamb and 250 g beef) with at least 20% fat for flavor.
In a food processor, add one large sliced onion and 3-4 cloves of garlic and chop them.
Add the ground meat to the food processor.
For moisture and binding, add 2 tbsp of Greek yogurt or plain yogurt and 2-3 tbsp of olive oil.
Add spices: 1 tbsp salt, 1 tbsp paprika, 1 tbsp dried oregano, 1 tbsp ground cumin, 1 tsp black pepper, and for heat, add 1/2 tsp cayenne pepper or 1 tsp Turkish crushed chili flakes.
Blend until the mixture becomes a smooth sticky paste, scraping down the sides as needed.
Preheat the oven to 200° C (400° F) and line a baking sheet with parchment paper.
Take two sheets of parchment paper (about 30 cm by 30 cm).
Divide the meat mixture into 3-4 equal portions.
Place one portion of meat between the two sheets of parchment paper and roll it out thinly into an even rectangle (2-3 mm thickness).
Carefully peel off the top layer of parchment paper.
Starting from the narrow end of the parchment paper, roll the meat upwards tightly, keeping it on the bottom sheet of parchment.
Transfer the rolled meat log still wrapped in parchment to the prepared baking sheet and repeat with the remaining portions.
Prepare filling veggies: chop capsicum and poke tomatoes. Optionally add red or green long pepper for heat.
Bake for about 20-25 minutes to set and cook the meat layers.
Remove the rolls from the oven and carefully unroll each log, placing the cooked meat sheet back on the baking tray.
Return the unrolled meat sheets to the oven and broil for 2-5 minutes until the edges are slightly darkened and crisp.
Chop some lettuce for assembling the kebabs.
Let the crispy meat sheets cool for a couple of minutes, then slice the meat into thin strips or break into smaller pieces, keeping any juices intact.
Slice the cooked veggies as well.
Take flat bread and fold it into a smaller size.
Spread the white sauce on the bread (recipe in description).
Add fresh salad ingredients like lettuce, tomato, onion, and pickles, being careful with seasoning due to the salt in pickles.
Pile on the warm sliced döner meat and drizzle with extra sauce if desired, and squeeze fresh lemon juice on top.
Fold from the bottom and sides, then roll towards the end.
Wrap the kebab in wax paper for easy eating.
Cut the kebab in half and enjoy.
