Shrimp & Snow Pea Stir Fry

6 cloves garlic

Mix 6 cloves of garlic and divide into two portions.

Prepare 2 slices of ginger and cut half of an onion into bite-sized pieces.

Peel the strings off the snow peas to remove tough fibers.

Rinse the peeled shrimp with water and dry them.

Season the shrimp with a little sugar, salt, white pepper powder, and corn starch, then mix everything together.

Add a teaspoon of sesame oil to the shrimp mixture.

Prepare a corn starch and water mixture by mixing corn starch and cold water until there are no clumps.

Heat a pan over medium high heat and add some oil.

Add a little sugar and salt to the oil, then add the onion and stir fry briefly to remove the raw taste.

Remove the onion from the pan once ready and add more oil if needed.

Add ginger to the oil and let it sizzle briefly, then add half of the garlic and let it season briefly.

Add a little sugar and salt, then immediately add the snow peas and stir fry until covered with oil.

Add a touch of rice wine (optional) and stir fry briefly to let the alcohol evaporate.

Add a little water and cover the pan for 10 seconds, then remove the snow peas from the pan.

Add more oil if needed and then add the shrimp, spreading them out and briefly pan frying both sides.

Add the rest of the garlic and stir fry until shrimp are about 60% done.

Add a touch of rice wine to the shrimp and continue to stir fry to cook off the alcohol (optional).

Season the shrimp with soy sauce, oyster sauce, and dark soy sauce, and stir fry until the color looks even.

Add the corn starch and water mixture to the pan to deglaze and create a flavorful sauce.

Once the sauce starts to boil and thicken, add the onion and snow peas back to the pan, along with black pepper powder.

Toss everything quickly to combine and serve.
