Mashkool is a traditional Qatari dish that reflects the rich culinary heritage of the Arabian Gulf. Often served during festive occasions and family gatherings, it combines fragrant rice with tender meat and aromatic spices, showcasing the region's love for bold flavors. Today, Mashkool is enjoyed not only in Qatar but also in neighboring countries, with each family adding their unique twist to the recipe.

Heat olive oil in a large skillet.
Sauté chopped onions until aromatic.
Add minced garlic and shredded ginger, then sauté.
Stir in dry ingredients: cinnamon stick, bay leaves, star anise, and cardamom.
Add three color bell pepper and chopped tomatoes.
Season with chicken cubes, black pepper, and salt.
Mix in 1 kilogram of diced chicken and various spices: spicy paprika, cinnamon powder, cumin powder, and black lemon.
Add tomato paste, chopped coriander leaves, and mint leaves, then mix well.
Pour in hot water and stir to balance the cooking.
Add diced potatoes (can be pre-fried) and turmeric powder, then mix again.
Cover and simmer the dish.
After a few minutes, stir the bottom of the pot.
Boil basmati rice in salted water with oil for about 7 minutes until half cooked.
Remove chicken and place it in a baking tray, drizzle with olive oil, and grill.
Layer half-cooked rice over the chicken mixture in the skillet.
Add mint and coriander leaves for aroma.
Top with remaining rice, then drizzle with rose water mixed with saffron.
Cover and simmer until the rice is fully cooked.
