2 bar spoons caster sugar
handful of mint leaves
50 ml Bacardi rum
crushed ice

Cut 1 lime in half and use a Mexican elbow to extract 25 ml of lime juice.

Discard the spent lime half and pour the lime juice into a tall glass.

Add 2 bar spoons of caster sugar to the lime juice and stir until dissolved.

Take a handful of fresh mint, slap it in your hand to release the aroma, and rub it around the rim of the glass.

Add the mint to the glass and fill it with crushed ice to the top.

Pour 50 ml of Bacardi rum into the glass over the ice.

Use a beverage napkin to protect the rim of the glass while stirring gently with a spoon to mix the ingredients without bruising the mint too much.

Add more crushed ice on top if needed, then top with a dash of soda water.

Gently bash 2 mint sprigs in your hand to release oils and aroma, then place them next to the straws as garnish.
