Luqaimat

2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon instant yeast
1/3 teaspoon ground cardamom
1/4 teaspoon salt
1/3 tablespoon baking powder
1 cup warm water
Oil, for frying
1 and 1/2 CUP of sugar
date syrup
honey

In a small bowl, add 1 tablespoon of instant yeast, 1 tablespoon of sugar, add a little water and mix it well.

In a large mixing bowl, combine flour, add 1/3 tablespoon of baking powder, a pinch of salt, add the yeast mixture into that.

Add gradually warm water. Mix until a smooth, thick batter forms.

Cover the bowl with a damp cloth and let the batter proof in a warm place for about an hour, or until it doubles in size.

In a deep frying pan or pot, heat oil over medium heat.

Once the oil is hot, drop small spoonfuls of the batter into the oil.

Fry the dough balls until they are golden brown and crispy on all sides.

Remove the fried luqaimat using a slotted spoon and drain them on paper towels to remove excess oil.

Place the fried luqaimat in a plate or large bowl.

Drizzle generously with the sugar or date syrup or honey while they are still warm. Toss to coat evenly.

Serve the luqaimat warm, garnished with a sprinkle of sesame seeds if desired.
