2oz (60ml) White rum
1 oz (30ml) Fresh lime juice
1/2-1 oz (15-30ml) Simple syrup (1:1 ratio)
8-10 mint leaves

60ml Soda water/sparkling water
1/2 cup (100g) Sugar
1/2 cup (120ml) water

Make the syrup: in a small saucepan combine sugar and water. Heat until sugar dissolves, turn the heat off and allow to cool completely.

Make the mojito: Put mint leaves in your palm and clap to release the oils. Place the mint in a high ball glass. Pour in white rum, simple syrup, lime juice and mix.

Add ice and finish with soda water.

Mix and garnish with fresh mint leaves.
