30 ml fresh lime juice

Prepare an ice bath by adding ice and water into a shaker tin.

Blanch a generous handful of fresh mint in boiling water for 10 to 15 seconds.

Immediately transfer the blanched mint into the ice bath and let it cool for up to 60 seconds.

Pick off all the mint leaves and discard the stems, adding the leaves into a blender with the prepared syrup.

Blend the mint leaves with the syrup until well combined.

Strain the mixture using a nut milk bag to separate the mint solids from the syrup.

Juice fresh limes to obtain 30 ml of lime juice.

In a highball glass, add 60 ml of rum, 30 ml of lime juice, and 22.5 ml of mint syrup.
