Start by gathering all ingredients: lean ground beef, grated onion, fresh chopped parsley, minced garlic, Lebanese seven spice mix, black pepper, cumin, and sumac.
Add the grated onion to the bowl with the ground beef and other ingredients.
Mix everything together using your hands or a KitchenAid mixer with a paddle attachment to avoid overmixing.
Wrap the mixture in plastic wrap and let it marinate for at least an hour, or overnight for more flavor.
Preheat the oven to 400°F for broiling.
Prepare a baking sheet with foil and place a wire rack on top to allow heat circulation.
Shape the meat mixture into torpedo-sized portions around thick skewers, pressing down the middle to compress it without overpacking.
Place the skewers on the wire rack and pour some water into the baking sheet to create steam during cooking.
Broil the skewers in the oven, turning halfway through to ensure even cooking and color on both sides.
Serve the kafta skewers with garlic sauce and rice.
