In a large pot over medium-low heat, add 5 tablespoons of olive oil.

Add 500g of dried meat, cubed and desalted, and mix until fried.

Once the meat is fried, add 5 crushed cloves of garlic and 1 medium onion, cubed, and sauté until lightly golden.

Add 400g of manioc, cut into smaller pieces, and mix to combine.

Next, add 3 peeled and chopped tomatoes and 1/2 diced red bell pepper.

Pour in hot water until everything is covered.

Add green onion, parsley, cilantro, and black pepper to taste, and mix everything together.

Cover the pot and let it cook for 30 minutes.

After 30 minutes, check that the manioc and meat are fully cooked.
