Gujarati Khaman Dhokla

1/4 tsp Baking Soda
Ginger+2 Green Chilli Paste
1/2 tsp Whole Mustard
1/4 tsp Turmeric Powder
1 tsp Baking Powder
Curry Leaves
chopped Coriander Leaves
Salt-Sugar as per taste
Refined Oil
1 tsp Sugar
1 cup water

Add 200 gm gram flour in a big bowl.

Slowly add 1 cup water to the gram flour to make a batter, ensuring there are no lumps and it is neither too thick nor too thin.

Add salt as per taste and lime juice to the batter and mix well.

Add 1 tsp sugar and 1 tsp ginger + green chili paste, then mix again.

Add less than 1/4 tsp turmeric powder and mix well.

Let the batter rest for 15 minutes.

After 15 minutes, beat the batter well with a whisk.

Brush oil in a container (like a cake tin or steel container) where you will make the dhokla.

Add 1 tsp baking powder and 1/4 tsp baking soda to the batter and mix well.

Pour the batter into the prepared container.

Start boiling water in a kadai.

Place the container with the batter in the kadai, close the lid, and steam for 20-25 minutes on medium to low flame.

After 20 minutes, check if it is cooked; if not, steam for an additional 10-15 minutes.

Once done, turn off the heat and take out the bowl, letting it cool down.

Once cooled, cut through the edges with a knife.

Cover with a plate and turn it upside down to release the dhokla.

Lift the bowl slowly and cover with another plate, turning it upside down again to remove the dhokla.

Slice the dhokla into pieces.

Heat 2 tbsp refined oil in a kadai, add 1/2 tsp whole mustard, and fry a little.

Add curry leaves and sliced green chilies, frying them on low flame for 2 minutes.

Add 1.5 cups water and turn the flame to high, then add 1 tbsp sugar and cook until the sugar melts.

Once the sugar melts, turn off the heat and pour the mixture over the dhokla.

Garnish with chopped coriander leaves and serve.
