Scrape and mince 250 grams of mackerel fillet at home.

Add 1 tsp of ground pepper, 2 tbsp of sugar, and 1 tbsp of salt to the minced fish.

Gradually add 175 cc of thick coconut milk while mixing, watching the consistency.

Add 4 cloves of thinly sliced shallots and 4 cloves of thinly sliced garlic to enhance the aroma.

Wet the spoon to prevent sticking when shaping the mixture into cakes.

Heat oil over medium heat until hot, not super hot.

Shape the mixture into cakes and gently drop them into the hot oil, frying until golden brown.

For the sauce, use 50 grams of tamarind and 250 grams of Aren sugar with 500 cc of water.

Add 1 tbsp of salt (not heaping) to the sauce mixture and cook until it boils and the tamarind dissolves.

Filter the sauce to remove tamarind remnants and impurities from the Aren sugar.
