Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions, garlic, and ginger; sauté until fragrant, about 3-4 minutes.
Stir in diced tomatoes and cook until softened, about 5 minutes.
Add goat meat and brown on all sides, about 5-7 minutes.
Pour in beef bone broth, add bay leaves and thyme, and bring to a simmer.
Cover and cook on low heat until goat is tender, about 1.5-2 hours, stirring occasionally.
Season with salt and black pepper to taste.
