Semla

Cultural Context

Originating in Sweden, Semla is traditionally enjoyed during Lent, particularly on Shrove Tuesday. This sweet bun, filled with almond paste and whipped cream, symbolizes the end of winter and the arrival of spring. Today, Semla is celebrated beyond its religious roots, with variations found across Scandinavia and even in modern cafes worldwide, where it is often enjoyed year-round.

heavy cream

🥗Healthier: whipped coconut cream

💰Cheaper: milk + cornstarch

Coconut cream is dairy-free and lower in calories.

almond paste

🥗Healthier: marzipan

💰Cheaper: ground almonds + sugar

Marzipan can be a more cost-effective alternative.

1

Measure lukewarm milk in a measuring cup.

2

Add instant yeast and a tiny bit of sugar to the milk and mix together.

3

Let the yeast mixture sit for at least 10 minutes until foamy.

4

In a stand mixer, combine the yeast mixture, sugar, one egg, and one egg yolk.

5

Add cardamom, vanilla extract, and salt to the mixer.

6

Add all-purpose flour to the mixer and mix until combined.

7

Add butter to the dough and knead with the dough hook until soft; add more flour if sticky.

8

Cover the dough and let it rise for at least 45 minutes to an hour until doubled in size.

9

Divide the dough into 12 equal pieces using a bench scraper.

10

Shape each piece into a round ball by rolling it on an unfloured surface.

11

Place the shaped buns on a baking sheet lined with a silicone mat or parchment paper and cover them to rise again.

12

Preheat the oven to 350°F (176°C) during the last rise.

13

Brush the tops of the buns with an egg wash made from one beaten egg and a little water.

14

Bake the buns for around 12 minutes until golden brown.

15

Transfer the baked buns to a cooling rack to cool completely.

16

Prepare the Mars Pan filling by mixing 250 g of Mars Pan ingredients (almond flour, powdered sugar, almond extract, and water) until it forms a Play-Doh-like consistency.

17

Mix butter into the Mars Pan mixture until well combined.

18

In a stand mixer, combine heavy whipping cream, a little vanilla, and sugar, then whisk until stiff peaks form.

19

Pipe the whipped cream onto the cooled buns after cutting a hole in the center and removing some filling.

20

Add a tablespoon of the Mars Pan filling into each bun before topping with whipped cream.

21

Repeat the assembly for all 12 buns.
