Originating in Sweden, Semla is traditionally enjoyed during Lent, particularly on Shrove Tuesday. This sweet bun, filled with almond paste and whipped cream, symbolizes the end of winter and the arrival of spring. Today, Semla is celebrated beyond its religious roots, with variations found across Scandinavia and even in modern cafes worldwide, where it is often enjoyed year-round.

Marzipan can be a more cost-effective alternative.
Break the yeast into small pieces in a bowl.
Add the milk to the yeast and the melted butter that has cooled down.
Mix well to dilute everything.
Add half a spoon of salt, the sugar, and one egg to the mixture.
Blend the mixture together.
Add almost all of the cardamom to the mixture, reserving a little for the filling.
Gradually add the flour to the mixture.
Knead the dough for 15 minutes, either by hand or using a mixer.
Cover the dough with plastic wrap and let it rise in a warm place for 1.5 to 2 hours until it doubles in volume.
Prepare the filling by mixing 200 grams of ground almonds, 150 grams of sugar, 150 milliliters of milk, and the reserved cardamom in a glass and beating it until smooth.
Whip the cream with the icing sugar until smooth, being careful not to overbeat it.
Once the dough has risen, take it out and separate it into balls of about 60 grams each.
Shape the dough into balls on a flat surface with minimal flour.
Place the balls on a baking tray lined with baking paper, ensuring they are spaced apart.
Cover the tray with a kitchen towel and let the buns rest for another 60 minutes.
Preheat the oven to 220 degrees Celsius.
Brush the buns with the leftover egg (optional) before baking.
Bake the buns in the preheated oven for about 10 minutes, using heat from above and below.
Once cooled, cut the top part of each bun with a sharp knife.
Hollow out the center of each bun with a spoon.
Fill the hollowed buns with the prepared almond filling.
Pipe the whipped cream into the buns and replace the tops.
