Break the yeast into small pieces in a bowl.

Prepare the filling by mixing 200 grams of ground almonds, 150 grams of sugar, 150 milliliters of milk, and the reserved cardamom in a glass and beating it until smooth.

Whip the cream with the icing sugar until smooth, being careful not to overbeat it.

Once the dough has risen, take it out and separate it into balls of about 60 grams each.

Shape the dough into balls on a flat surface with minimal flour.

Place the balls on a baking tray lined with baking paper, ensuring they are spaced apart.

Cover the tray with a kitchen towel and let the buns rest for another 60 minutes.

Preheat the oven to 220 degrees Celsius.

Brush the buns with the leftover egg (optional) before baking.

Bake the buns in the preheated oven for about 10 minutes, using heat from above and below.

Once cooled, cut the top part of each bun with a sharp knife.

Hollow out the center of each bun with a spoon.
